Favourite Dishes at Luxury Scotland Restaurants

June Newsletter Article – Guest Favourites for Summer 2018

favourite dish at Glenapp Castle
Scotland is rightly famous for its wonderful produce … beef, venison, seafood and a host of glorious vegetables and soft fruits. Seasonality will always play a major part in the design of our restaurant menus.

So, we thought we would ask our hotels which of their dishes are the most popular with their guests. Here are the results – some of our ‘Guest Favourites‘ that you can enjoy while dining in style at the restaurants in Luxury Scotland hotels.

(Full details can be found in our latest article for Luxury Scotland’s ‘Explore & Discover’ section.)

favourite-dishes at luxury scotland restaurants

At Airds hotel, a dish of Loch Melfort Sea Trout, Linguine, Oyster, Sea Vegetables, Razor Clam Viniagrette has been developed to showcase some of the best fresh produce on offer from the West Coast of Scotland.

Scottish heritage tomatoes and a wonderful goat’s cheese are the centre piece of this regular favourite on Borthwick Castle’s menus –  Scottish tomatoes with lovage pesto, Ticklemore goats cheese & Provencal granola. The dish is brought together with trickles of lovage pesto and a sprinkling of Provencal granola including garlic, basil seeds, pine nuts and honey.

Loch Crinan Jumbo Prawns Corryvreckan is one of Crinan Hotel’s spectacular signature dishes. A perennial favourite with guests at Crinan, this dish was created by Nick Ryan, proprietor and host at the Crinan Hotel for more than 45 years.

Glenapp Castle’s  Buttermilk Pannacotta with Poached Rhubarb and Honeycomb symbolises Glenapp’s ethos of utilising seasonal food and homegrown produce where possible, creating a taste sensation for our diners that reflects our local Scottish produce.

favourite-dishes at luxury scotland restaurants
Guests at Glencoe House  can enjoy the very best of Scotland’s Ocean larder served in style. A feast for seafood lovers, this favourite with Glencoe House guests features local lobster and langoustines, as well as oysters and dressed crab.

For chef Paul Kitching at 21213 Restaurant with Rooms, Haggis is a magical dish, enveloping all things Scottish. Take a creamy risotto, ‘crumbed haggis’ , a sprinkle of nuts, fruits and seeds, sliced shallot, and top with a smoked cream Arbroath or a Langoustine Bisque… and you have yet another very popular 21212 classic dish.

The Orkney Crab starter is by far the most popular starter on One Devonshire Garden’s summer menu. Head Chef, Gary Townsend uses the white meat of the crab dressed with lemon, chives and apple enhanced with avocado, confit plum tomatoes, tomato jelly and torched tomatoes to create this bright, vibrant and fresh tasting dish, perfect for summer dining.

The showstopper at One Square Restaurant in Sheraton Grand Edinburgh is Strathdon Blue Trifle with grapes, pear, walnuts and Dacquoise biscuit. The idea behind this dish was to create something truly Scottish, whilst also encapsulating the elements of a cheese board.

WONDERFUL KITCHEN GARDENS & GLORIOUS FOOD AT LUXURY SCOTLAND HOTELS

Sunshine is in abundance here in Scotland now that Spring is well established and the best of fresh Scottish produce is being showcased throughout the Luxury Scotland hotels.

One of the pleasures I particularly enjoy when travelling throughout Scotland is the seasonal specialities brought to the table at our restaurants. With Spring comes Scottish Asparagus, wild garlic, wild sea trout, spring lamb , roe deer and rhubarb all served to perfection.

Kitchen gardens are an integral part of many Luxury Scotland hotel restaurants. An ideal source of good supply of fresh herbs, salads and vegetables they also serve to enhance the guest experience.

Below are just a few comments from some of our member hotels
about the importance of their kitchen gardens:

Airds Hotel - Kitchen Garden

AIRDS HOTEL – KITCHEN GARDEN

“We are fortunate to have the space to be able to grow much of our own vegetables and herbs in our very own polytunnel. Our gardener at Airds Hotel regularly meets with our Head Chef to check what he wants him to grow and ensuring that seasonality is at the heart of our cuisine. There is nothing nicer for a Chef than to pop out to the hotel’s own kitchen garden and pick their own produce – nothing is fresher than that!”

Torridon Kitchen Garden

TORRIDON HOTEL – KITCHEN GARDEN

“At Torridon we have our large greenhouse, a sizeable polytunnel and a number of cold frames to bring on fruit, herbs and vegetables under cover. Our garnishes, salads, and desserts, such as lemon verbena sorbet, are popular with customers who see the added value and effort and enjoy discussing the provenance of their food. It also enables us to engage with them on social media.”

Boath House Kitchen Gardens

BOATH HOUSE – KITCHEN GARDEN

“At Boath House on the Moray coast, our cuisine is based on local produce. The kitchen garden at Boath House provides much of the organic fruit, herbs and vegetables for our restaurant. Our honey comes from our own bee hives located nearby. Our local suppliers provide a wonderful range of fresh seasonal foods including high quality seafood caught and delivered daily by our West Coast supplier, as well as meat and cheeses sourced from a nearby organic dairy.”

Glneapp Castle Kitchen Gardens

GLENAPP CASTLE – KITCHEN GARDEN

“At Glenapp almost all our fruit, vegetables and herbs comes from our own kitchen garden. Our fish and shellfish are line-caught or hand-dived off Scotland’s west coast and the game comes from local estates from across Ayrshire. Beef, lamb, and pork are locally farmed a few miles from Glenapp Castle. Our chefs create a truly memorable dining experience which includes canapés, coffee, and petits fours and the menu changes every night”

CROMLIX – KITCHEN GARDEN

“Set in 34 acres of grounds, Cromlix in Perthshire has a wonderful herb and vegetable garden which provides an abundance of fresh produce for the Chez Roux restaurant. The kitchen garden is also a favourite with local schools who visit as part of the Adopt a School initiative – set up by Albert Roux OBE, KFO as a national charity partnership with the Royal Academy of Culinary Arts and Service”

Andrew Fairlie - Kitchen Gardens

ANDREW FAIRLIE – KITCHEN GARDEN

“Scotland and the seasons is the obvious answer. In the autumn it’s game; in winter it’s the most amazing shellfish – which are at their absolute best during the colder months – and in the spring and summer it’s our Victorian walled garden, which is a constant source of stimulation. We grow over 250 types of herbs, vegetables and fruit, and there’s always something new and intriguing appearing in the kitchen.”

Just reading through these comments reminds me of so many delicious meals I have enjoyed at our hotel restaurants. I do hope you might also be persuaded to take a short break and enjoy the very best of our Scottish produce at Luxury Scotland’s hotels. >>>

What an exciting year that was! Luxury Scotland 2017 Review

2017 Luxury Scotland Review

LUXURY SCOTLAND 2017
What an exciting year that was!

I have been looking back at all the exciting events and developments we enjoyed during Luxury Scotland’s 25th Anniversary year.

We were very privileged to announce the addition of three more of Scotland’s finest luxury properties to our portfolio:
Kinross House
Estate in Kinross-shire, Lews Castle on the Isle of Lewis and The Isle of Eriska Hotel & Spa.

We also welcomed a new commercial partner – the famous Dunnet Bay Distillery whose Rock Rose Gin and Holy Grass Vodka have received rave reviews from drinks experts and the cocktail generation.

Our existing members continued to enhance their guest experience with several new features. Glencoe House opened six new luxury suites and Belmond Royal Scotsman added a luxury spa to their on-board facilities. The Old Course Hotel enjoyed a wonderful reopening after a 3-month refurbishment and Gleneagles opened The American Bar and The Birnam Brasserie.

During the year our visitors enjoyed a number of sumptuous gourmet dining events featuring top chefs including Emily Roux at Greywalls, Marcello Tully at Kinloch Lodge and Michel Roux who graced Crossbasket Castle and then joined Andrew Fairlie at an event at Gleneagles.

At Lochgreen House in Ayrshire the Costley Kitchen Club was launched and new menus continued to wow diners at Restaurant Martin Wishart in Cameron House on Loch Lomond.

Following the success of our Ultimate Road Trip on the North Coast 500 itinerary, we added several more wonderful driving itineraries around Scotland for those visitors who, like me, have a passion for discovering the joys of driving in Scotland.

If sailing rocks your boat, look at our Sailing in Scotland page which highlights exciting opportunities for luxury charters just outside Edinburgh on the Firth of Forth and on Scotland’s west coast at Crinan.

To mark our 25th Anniversary, a special Connoisseurs Scotland Edition of the famous Monopoly game was produced and is now available for guests to enjoy in our Luxury Scotland hotels. Already considered a collectors’ item, we advise all Monopoly addicts to ‘like’ our Luxury Scotland Facebook page as several of these unique sets will be given away as prizes during December.

In conjunction with the Wigtown Book Festival we established a literary link with each of our luxury hotels and a specific book to which they have links. Our little library, Luxury Scotland’s Literary Links, comprising all these books has been won by Preston Street School in Edinburgh.

2018 promises to be another exciting year for Luxury Scotland. We already have some exciting announcements on our Special Offers page and on our Facebook page so please keep a look out for email newsletters.

Wishing you a very enjoyable 2018.

Luxury Scotland Newsletter – October 2017

The Latest News from Luxury Scotland from LUXURY SCOTLAND

With the rich golds and reds of Autumn now appearing on Scotland’s trees, ramblers and walkers can look forward to dramatic explosions of colour across Scotland’s forest landscapes.

In our Luxury Scotland archives there is a very interesting article on Autumn Walks and Woodland Trails which gives some handy advice on where to see this autumnal spectacle.

AUTUMN GLORY ARTICLE

With the arrival of Autumn our thoughts turn to the coming winter months and in particular the festive season. Christmas and New Year are key dates in Scotland’s calendar with festivals throughout the Highlands & Islands – and city celebrations in Edinburgh, Glasgow and Aberdeen. It’s a busy time with many hotels already enjoying excellent bookings for their Festive Packages.

Hogmanay is the name given to our News Year’s Eve celebrations in Scotland. For many this is the highlight of the festive calendar. The origins of the word are unclear but what us certain is there is nothing quite like it anywhere else in the world. It can feel like one huge party right across Scotland with all kinds of celebrations involving young and old, neighbours, best friends and a very inclusive welcome for our visitors.

In the Luxury Scotland calendar this is a time for some exciting Special Offers and Festive Packages covering everything from city breaks, country house celebrations to exclusive use options in romantic Scottish castles. As we look ahead to the festive season, this month’s newsletter focuses on some early offerings from our members – a selection of which are listed below.

Wishing you all a very enjoyable Autumn,

Four Wonderful Road Trips around Scotland

Four Wonderful Road Trips around Scotland

Driving around Scotland is a wonderful experience and one of the best ways to enjoy and discover more about this wonderful country.

The North Coast 500 [NC500] is a stunning tour around the north of Scotland and is one of the greatest road trips in the world. Starting and ending in Inverness the trip covers 500 miles of spectacular countryside, wide open roads, friendly people and delicious fresh, local food. To fully enjoy the North Coast 500 will take you the best part of a week.

However, if you are looking for something shorter, I have four tours of my favourite road trips to share with you. They will introduce you to four special regions of Scotland with magnificent scenery and most are easily driven in a day.

Scotland is a paradise for those who enjoy travelling by car. I am always in awe of new discoveries and the dramatic landscapes as I travel around Scotland. I hope these tours will whet your appetite for discovering our wonderful country.

Jeremy Hawkings, Chief Executive,
Luxury Scotland.
E: jeremy@luxscot.co.uk

1. The East Neuk of Fife Tour

This a short 25 miles itinerary along Fife’s Coastal Route.

Within a few hours you can enjoy spectacular coastal scenery, visit several historic fishing villages, find out how Scotch whisky is distilled and discover how some of Scotland most famous cheeses are made.

You might even take a boat trip to the Isle of May where you will see puffins, seals and other wildlife.

MORE INFO

2. The East Lothian and the Borders Tour

About 65 miles long, depending on how many of the wonderful stately homes you decide to visit.

We begin at the seaside with a chance to discover one of the world’s most famous seabird colonies and to visit a unique distillery famous for making ‘The Edinburgh Malt’.

Then we drive off to discover some of Scotland’s castles and great mansion houses including the home of Sir Walter Scott, the famous Scottish historical novelist, playwright and poet.

MORE INFO

3. The Road to the Isles Tour

One of my favourite journeys in Scotland.

It is 50 miles long, runs from Fort William to Mallaig and has some of the most spectacular scenery in Scotland. During this tour you will cross The Caledonian Canal, see the famous Neptune’s Staircase and walk on the The Sands of Morar.

You can enjoy marvellous views of Ben Nevis and you might catch a glimpse of The Jacobite Steam Train as it crosses the Glenfinnan Viaduct featured in the Harry Potter Films.

MORE INFO

4. The Rest and be Thankful – The Bridge over the Atlantic Tour

Like its title, this route is longer than the other. Approximately 200 miles it is worth taking 3 days to enjoy.

The trip starts with a drive up and over The Rest and be Thankful, one of the most famous roads in Scotland. The route travels through the towns of Inverary and Mynard on Loch Fyne where you can visit Inverary Castle and explore the archaeological sites of standing stones.

You can also enjoy some of the best of Scottish seafood at the end of the Crinan Canal. You will be able to drive over the Clachan Bridge which is known as ‘The Bridge over the Atlantic’ and experience the majesty of Glen Coe.
